Buckwheat has a low gluten content,main protein is globulin.Essential amino acids is high levels of lysine and low levels of methionine,and their amino acids patterns can complement those of major grains such as wheat,corn,and rice with low levels of lysine.Due to its small particles,it has the characteristics of being easy to cook,digest,and process compared to other grains.It also contains rich dietary fiber,which is 10 times higher than refined rice.It contains more trace elements such as iron,manganese,and zinc than regular grains,too.
