Mung bean contains 22%-26% protein,around 50% starch,among which 29% is amylose starch,71% is amylopectin starch.It has 3%-4% cellulose,which is only 1%-2% in other grains.Mung bean also contains around 50% starch,among which amylose starch takes 29%,and amylopectin takes 71%.Mung bean also contains abundant Vitamin B and minerals,while low content of fat.
